Quick Mix #4

Today's Quick Mix recipe is:

Hot Fudge Pudding Cake

1 1/2 cups Quick Mix
1/2 cup sugar
2 tablespoons cocoa
3/4 cup chopped nuts (optional)
1/2 cup milk
1 teaspoon vanilla
3/4 cup packed brown sugar
1/4 cup cocoa
1 1/2 cups boiling water

Preheat oven to 350 degrees.
In an unbuttered 8 inch square pan, combine Quick Mix, sugar, 2 T cocoa, nuts, milk & vanilla.
Blend well.
Combine brown sugar & 1/4 cup cocoa in a small bowl.
Sprinkle over the top of the cake mixture.
Gently pour boiling water over top of mixture.
DO NOT STIR!
Bake 35-40 minutes, til edges separate from pan.
Cool in pan 15 minutes before serving.
Makes one 8 inch cake.

Variation:
Omit nuts & add 1 cup miniature marshmallows.

One For The Grandkids!

This is one I will read to my grandbabies! This Little Prayer of Mine helps them to realize all of the things we can thank God for. Every day things that we tend to forget. It helps them to see that God can & is in their lives evryday. All the tough stuff they have to go through, He is there!

Make A Mix #3

This is Make-A-Mix recipe #3. It is for Sugar cookies!

Sugar Cookies

3 cups Quick Mix
1 cup sugar
1/2 cup milk or water
1 egg, beaten
1 teaspoon vanilla, lemon, or almond extract

Preheat oven to 375 degrees.
Lightly grease baking sheets.
Combine Quick Mix & sugar in a medium bowl.
In a small bowl, combine liquid, egg & extract.
Add to dry ingredients.
Blend well.
Drop by teaspoonfuls onto greased cookie sheets.
Bake 10-12 minutes til lightly browned.
Makes 30-36 cookies.

Variations:
Add 1 cup of nuts, raisins, chocolate chips, butterscotch chips or dates.

Enjoy! I am off to make a batch right now cause that's what I do when it is raining outside!
Cookies are done already! Sure smells good at my house! They are a keeper!

Quick Mix Recipe #2

This recipe uses yesterdays quick mix for pancakes. It is called Nevada's pancakes.

Nevada's Pancakes

2 1/4 cups Quick Mix
1 tablespoon sugar
1 egg, beaten
1 1/2 cups milk or water

Combine Quick Mix and sugar in medium sized bowl.
Mix well.
Combine egg & liquid in a small bowl & beat together.
Add all at once to the dry ingredients.
Blend well.
Let stand 5-10 minutes.
Cook on hot oiled griddle about 3-4 minutes until lightly browned on both sides.
Makes 10-12 4 inch pancakes.

Variation:
Nevada's Waffles

Bake batter in oiled preheated waffle iron til golden brown. Makes 3 large waffles.

Enjoy! That's what's for supper at our house tonight!

Make A Mix

I love saving time & money! I have a couple of books that have taught me how to make my own mixes for just about anything! I am going to share some of them here!

The first one is from: Make-A-Mix Cookery by Karine Eliason, Nevada Harward, & Madeline Westover.

Quick Mix

8 1/2 cups flour   
1 tablespoon baking powder
1 tablespoon salt
2 teaspoons cream of tartar
1 teaspoon baking soda
1 1/2 cups instant dry milk
2 1/4 cups vegetable shortening

In a large bowl, sift together all dry ingredients. Blend well. With pastry blender, cut in shortening until evenly distributed. Mixture will resemble cornmeal in texture. Put in an airtight container. Label. Store in a cool, dry place. Use within 10-12 weeks. Makes about 13 cups of quick mix.

Quick mix makes a variety of items. I will share one today.

Karine's Drop Biscuits

3 cups quick mix
3/4 cups milk or water

Preheat oven to 450 degrees. Grease a baking sheet.
Combine quick mix & liquid in a medium bowl.
Stir until just blended. Drop dough by tablespoonfuls onto greased baking sheet. 
Bake 10-12 minutes until golden brown. Makes 12 large drop biscuits. 

This mix makes 32 items in this cookbook. I am sure it could be used in place of Bisquick also.

Eggs Galore!

When we have extra eggs I am always on the search for new ways to make them. I found this yummy one on http://www.allrecipes.com/. It is an asparagus quiche!
Ingredients




1/2 pound fresh asparagus, trimmed and cut into 1/2 inch pieces


5 slices bacon


1 (8 inch) unbaked pie shells


1/2 egg white, lightly beaten


2 eggs


3/4 cup half-and-half cream


1/8 teaspoon ground nutmeg


salt and pepper to taste


1 cup shredded Swiss cheese


Directions


This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 2 - 8 inch quiche.


1.Preheat oven to 400 degrees F (200 degrees C). Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.


2.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.


3.Brush pie shells with beaten egg white. Sprinkle crumbled bacon and chopped asparagus into pie shells.


4.In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.


5.Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.


Makes 6 servings.

Could it be? No More Dreaded Mondays? Interesting title....interesting book. Dan Miller gives you plenty to think about but not much concrete work towards making it a possibility.


It is a lot of the listmaking & goalsetting that most every book has but I was hoping for the next push to what to do but it never came.

 
It did make me want to go back to read his other one to see if it was better.

This is definitely a book that makes you think! Chantel Hobbs makes you aware that one day at a time is all we have. The past is gone! Tomorrow is not here yet so why worry!



Her 10 Commandments for Weight Loss are worth remembering. I think they would be beneficial to write down & refer to.



I like the actual pictures of the exercises. It helps to see what you are doing.


All in all it was a good read & helpful.

Latest Pictures of the Babies! Spring is Here!


The 3 bucklings are growing like crazy! Here is the latetest pictures. The shot with the 2 are the ones I found & thought were dead! The one in the warming hut is the bigger one!

Here are some more signs of spring in our neck of the woods or prairie.
This is the first asparagus that I have gotten from my patch this year! Yummy!

This is the rhubarb starting to peak out. We have had a heck of a time getting rhubarb to survive here so I am glad to see it!!

I have another doe due around the end of the month & am hoping & praying for girls this time!!!

The babies have arrived!!

We have baby goats! Three little bucklings to be exact!

My black doe Hope is quite a loner when it comes to having her babies! I swear she waits until I am gone or in the house to have hers! I have never seen her deliver.

 She has 3 beautiful black & white boys! One of them is pretty tiny & not sucking very well yet so he is in the house but the other 2 are with the momma.


What fun!

Goats

I have one doe who is due to kid in another day! She is ready. We moved her to the birthing pen last night & she is adjusting well. No babies when I went out this morning but time will tell.  The black one (Hope) is due this week. This is a shot from last summer so she is much bigger than this today!  I will keep you posted!

March Snow!

I woke up this morning to snow on the ground! It seems so strange to see the robins hopping around in the snow! I am hoping that one day soon the green will be here to stay!

Last week end we sowed another hay field. We don't have fancy equipment so we sowed it by hand. My husband first ran the disc over it with his antique tractor & then we walked it for 2 hours & sowed seed. Then after that he ran the harrow over it to lightly cover the seed. Hopefully in a few weeks we will see seedlings starting to pop up!

I am planning on paper what is going in the garden! Right now we can't get in the field. It is way too wet with snow on it!

Springtime!

Is springtime on it's way in your neck of the woods? It is here! The robins have been back for about 2 weeks now & the walking onions have begin to peek their greenery out of the dirt!

It starts a bug in me that wants to get out & start digging in the garden. I went out yesterday to check on things & when I opened the cold frame it came off its hinges. Guess that will have to be a project to put on the to do list!

We will be seeding the pasture again this year & so that is on the list for this week end. As I walked the garden & yard I noticed little tufts of green throughout trying to break through to the sun! I can't wait for the brown to go away & the green to reappear!

Just wondering?!?

Ever wonder how this whole internet thing will end up? Will it go the wayside like the typewriter? Will it become the only way to communicate?

I have seen it become the best way for scam artists to attack people! There is no recourse-you have no way to find them!! Do not take any mystery shopping jobs from Secret Shopper! It is a scam! The first emails you get are believable from Dianne Scholes but then it becomes weird! They start coming from Micheal Scholes & you never get paid!! Take care & don't get taken advantage of!!

If anything sounds to good to be true -it is-don't fall for it!!!

3 Books in One!

This is a wonderful children's book. It covers so many of the questions that children ask. It gives simple but wonderful answers to those questions.


I love the art work! It just looks inviting!
