Sunshine Coffeecake
3 cups Quick Mix
1/3 cup sugar
1 egg beaten
1 cup milk
1 teaspoon vanilla
Cinnamon Crumble topping-see below
Cinnamon Crumble topping
1/3 cup flour
1/2 cup cookie or cake crumbs
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter
Preheat oven to 350 degrees.
Butter an 8 inch square pan.
In a medium bowl, combine Quick Mix & sugar til evenly distributed.
In a small bowl, combine egg, milk & vanilla.
Stir til just blended.
Add liquid ingredients all at once.
Fold mixture together til blended.
Prepare Cinnamon Crumble Topping.
Spread half the batter in the prepared pan.
Spread half of topping over the batter.
Top with remaining batter & topping.
Bake 40-50 minutes.
Makes one 8 inch cake.
Cinnamon Crumble Topping
In a medium bowl, combine flour, crumbs, brown sugar & cinnamon.
With a pastry blender/fork cut in butter til mixture is crumbly.

Quick Mix #15
Super-Duper Doughnuts
Cooking oil for frying
2 cups Quick Mix
1/4 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
1 egg beaten
1/2 cup milk
Vanilla glaze-recipe follows
Vanilla Glaze:Combine all ingredients & stir until smooth.
1 1/4 cup powdered sugar
2 teaspoons milk
1/2 teaspoon vanilla
In a deep fryer, heat oil to 375 degrees.
In a medium bowl, combine Quick Mix, sugar, cinnamon, & nutmeg.
Blend well.
In a small bowl, mix together vanilla, egg & milk.
Add all at once to dry ingredients.
Stir until well blended.
On a lightly floured surface, knead dough about 10 minutes.
Roll out to 1/2 inch thickness & cut with a floured doughnut cutter.
Fry in hot oil about 1 minute on each side, until golden brown.
Drain on paper towels.
While doughnuts cool slightly, prepare vanilla glaze.
Dip warm doughnuts in glaze.
Makes about 12 doughnuts.

Sunday Shortcake

1/2 cup milk
1 egg beaten
fruit-as desired
whipped cream
Preheat oven to 400 degrees.
Combine Quick Mix & sugar in medium bowl.
Mix well.
In a small bowl, combine melted butter, milk & egg.
Add to dry ingredients.
Stir with a fork til just moistened.
On a lightly floured surface, knead 8-10 times.
Roll out dough to 1/2 inch thickness.
Cut with a lightly floured 3 inch round cutter.
Bake on an unbuttered baking sheet about 10 minutes til golden.
Cool.
Top with fruit as desired & whipped cream.
Makes 6 shortcakes.

Apple-Nut Cake

1 teaspoon cinnamon
1/2 teaspoon cloves
2 eggs
1/4 cup milk
2 cups pared, cored grated apples
1/2 cup raisins
1/2 cup nuts-optional
Preheat oven to 375 degrees.
Lightly grease an 8 inch square pan.
In medium bowl, combine Quick Mix, brown sugar, cinnamon & cloves.
Mix well.
Add eggs & milk.
Blend with an electric mixer 1 minute.
Add apples & blend 2 more minutes.
Stir in raisins & nuts.
Pour into prepared pan.
Bake 40-50 minutes until a tooth pick in center comes out clean.
Cool in pan 10 minutes, then cool on a wire rack.
Makes 1 eight inch cake.
Variation:
Banana Nut Cake-omit raisins.
Substitute 1 cup mashed bananas for apples.

Quick Mix #12
Crescent Butter Cookies
2 cups Quick Mix
1/4 cup sugar
1/2 cup butter
1 teaspoon vanilla
1/2 cup chopped pecans or walnuts
powdered sugar
Preheat oven to 350 degrees.
In a medium bowl, combine Quick Mix & 1/4 sugar.
Mix well.
With a pastry blender, cut in butter until evenly distributed.
Add vanilla & nuts.
Blend well.
Roll teaspoonfuls of dough to thin 2 1/2 inch lengths.
Shape into crescents on unbuttered baking sheets.
Bake 8-10 minutes, until light brown.
Cool slightly.

Makes 36-48 cookies.

Bake about 25 minutes.
Drain on paper towels.
Serve warm on toothpicks.
Makes about 75 appetizers.

1 cup Quick Mix
1/4 cup cornmeal
1/4 teaspoon salt
About 1/4 cup milk
Preheat oven to 400 degrees.
Lightly grease a baking sheet.
In a medium bowl, combine Quick Mix, cornmeal & salt.
Add milk to form dough.
Knead about 12 times, until dough is smooth.
Shape into pencil-like strands 1/2 inch thick.
Cut into 8 inch lengths.
Bake 20 minutes until browned & crisp.
For extra crispiness, turn oven off & leave breadsticks in oven 5-10 more minutes.
Makes 6-8 breadsticks.
I am going to try sprinkling garlic on mine for spaghetti supper night!

3/4 cup yellow cornmeal
4 teaspoons sugar
1 egg, beaten
1 cup milk
Preheat oven to 400 degrees.
Butter an 8 inch square pan.
In a medium bowl, combine Quick Mix, cornmeal & sugar.
Mix well.
Combine egg & milk in a small bowl.
Add half of egg ixture to dry ingredients.
Blend well.

Spread evenly in prepared pan.
Bake 25-30 minutes, until golden brown.

Millionaire Bars
1 - 14 oz pkg of caramels
1/3 cup evaporated milk
2 1/2 cups Quick Mix
1/3 cup cocoa
3/4 cup sugar
1/2 cup brown sugar
1/2 cup butter
1/3 cup evaporated milk
1 -6 oz pkg chocolate chips
3/4 cup chopped nuts (optional)
Preheat oven to 350 degrees.
Lightly grease & flour a 9x13 baking pan.
In a medium saucepan combine caramels & 1/3 cup evaporated milk.
Cook over low heat about 10 minutes, stirring constantly til caramels are melted.
Keep warm.
In a medium bowl, combine Quick Mix, cocoa, sugars, butter & 1/3 cup evaporated milk.
Stir til dough holds together.
Press 1/2 of dough into pan, reserving remaining dough for topping.
Bake about 7 minutes til edges are browned.
Remove from oven & cool slightly.
Drizzle caramel mixture evenly over baked crust & sprinkle with chocolate chips & nuts.
Top with remaining dough.
Bake 15-20 minutes more, til edges separate from pan.
Cool thoroughly.
Cut into 2 inch squares.
Makes about 24-30 bars.

Mix well.
In a small bowl, combine eggs, buttermilk, bananas, lemon juice & vanilla.
Blend well.
Add banana mixture to dry ingredients.
Beat batter well.
Add nuts if desired.
Pour into greased loaf pan.
Bake about 1 hour until a toothpick inserted in center comes out clean.
Let stand 5 minutes in pan.
Remove from pan & cool on a wire rack.
Makes one loaf.

Quick Mix #6
Today's recipe is Impossible Pie. Sounds yummy! I a going to try some different variations. I think if you would use lemon extract it might taste like a lemon cream pie!

1/2 cup sugar
4 eggs
2 cups milk
1 teaspoon vanilla
3 tablespoons melted butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup Quick Mix
Preheat oven to 400 degrees.
Butter a 9 inch pie plate.
In a blender, combine sugar, eggs, milk, vanilla, melted butter, cinnamon & nutmeg.
Blend until smooth.
Add Quick Mix & blend 30 more seconds.
Pour into prepared pie plate.
Bake 25 -30 minutes until golden.

Today's Quick Mix recipe is something savory.
Self-Crust Cheese Tart
paprika
1 cup grated Swiss cheese
4 strips bacon-cooked & crumbled
3 eggs
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cup milk
1teaspoon minced onion
1/3 cup Quick Mix
Preheat oven to 325 degrees.
Generously butter a 9 inch pie plate.
Sprinkle bottom & sides with paprika.
Layer Swiss cheese & bacon on bottom of pie plate.
Combine eggs, salt, nutmeg, milk, onion, & quick mix.
Blend until thoroughly mixed.
Pour over cheese & bacon in pie plate.
Bake 30-40 minutes until a toothpick inserted in center comes out clean.
Serve hot.
Makes 6 servings.

1 1/2 cups Quick Mix
1/2 cup sugar
2 tablespoons cocoa
3/4 cup chopped nuts (optional)
1/2 cup milk
1 teaspoon vanilla
3/4 cup packed brown sugar
1/4 cup cocoa
1 1/2 cups boiling water
Preheat oven to 350 degrees.
In an unbuttered 8 inch square pan, combine Quick Mix, sugar, 2 T cocoa, nuts, milk & vanilla.
Blend well.
Combine brown sugar & 1/4 cup cocoa in a small bowl.
Sprinkle over the top of the cake mixture.
Gently pour boiling water over top of mixture.
DO NOT STIR!
Bake 35-40 minutes, til edges separate from pan.
Cool in pan 15 minutes before serving.
Makes one 8 inch cake.
Variation:
Omit nuts & add 1 cup miniature marshmallows.

This recipe uses yesterdays quick mix for pancakes. It is called Nevada's pancakes.
Nevada's Pancakes
2 1/4 cups Quick Mix
1 tablespoon sugar
1 egg, beaten
1 1/2 cups milk or water
Combine Quick Mix and sugar in medium sized bowl.
Mix well.
Combine egg & liquid in a small bowl & beat together.
Add all at once to the dry ingredients.
Blend well.
Let stand 5-10 minutes.
Cook on hot oiled griddle about 3-4 minutes until lightly browned on both sides.
Makes 10-12 4 inch pancakes.
Variation:

Make A Mix
I love saving time & money! I have a couple of books that have taught me how to make my own mixes for just about anything! I am going to share some of them here!

In a large bowl, sift together all dry ingredients. Blend well. With pastry blender, cut in shortening until evenly distributed. Mixture will resemble cornmeal in texture. Put in an airtight container. Label. Store in a cool, dry place. Use within 10-12 weeks. Makes about 13 cups of quick mix.
Quick mix makes a variety of items. I will share one today.
Karine's Drop Biscuits
3 cups quick mix
3/4 cups milk or water
Preheat oven to 450 degrees. Grease a baking sheet.
Combine quick mix & liquid in a medium bowl.
Stir until just blended. Drop dough by tablespoonfuls onto greased baking sheet.
Bake 10-12 minutes until golden brown. Makes 12 large drop biscuits.
This mix makes 32 items in this cookbook. I am sure it could be used in place of Bisquick also.

Eggs Galore!
When we have extra eggs I am always on the search for new ways to make them. I found this yummy one on http://www.allrecipes.com/. It is an asparagus quiche!
Ingredients
1/2 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
5 slices bacon
1 (8 inch) unbaked pie shells
1/2 egg white, lightly beaten
2 eggs
3/4 cup half-and-half cream
1/8 teaspoon ground nutmeg
salt and pepper to taste
1 cup shredded Swiss cheese
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 2 - 8 inch quiche.
1.Preheat oven to 400 degrees F (200 degrees C). Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.
2.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
3.Brush pie shells with beaten egg white. Sprinkle crumbled bacon and chopped asparagus into pie shells.
4.In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.
5.Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.
Makes 6 servings.

Could It Be?
Could it be? No More Dreaded Mondays? Interesting title....interesting book. Dan Miller gives you plenty to think about but not much concrete work towards making it a possibility.
It is a lot of the listmaking & goalsetting that most every book has but I was hoping for the next push to what to do but it never came.
It did make me want to go back to read his other one to see if it was better.

Finished at Last!!
I have been working on a table runner for a sister Farm Girl at MaryJane's Farm. I hope for it to be an heirloom for her family to pass down from generation to generation! Here are the pictures of the finished table runner.
